Ingredients:
- 4 cups chilled filtered or spring water
- 2-inch piece of fresh ginger, peeled and grated (about 2 tablespoons grated ginger)
- 2-3 tablespoons of honey, or to taste
- Ice cubes
Instructions:
- In a 1-quart pitcher, combine the chilled water, grated ginger, and honey. Stir until the honey has fully dissolved.
- Cover the pitcher and refrigerate for 15-20 minutes to allow the ginger flavor to infuse the water.
- Using a fine mesh strainer, strain the ginger-infused soda water into a clean pitcher, pressing on the solids to extract as much liquid as possible.
- Discard the grated ginger pulp.
- Fill glasses with ice cubes.
- Slowly pour the strained ginger soda water over the ice.
- Serve immediately, garnished with a slice of fresh ginger, if desired.
